DESCRIPTION
The mung bean (Vigna radiata (L.) R.Wilczek) is a species of pulse (like lentils, chickpeas, soy ...) which originated on the Indian subcontinent and is grown mainly in India, China and south-east Asia (1).

Both shoots and whole seeds of mung beans are used in Asia as ingredients in numerous dishes. The cooked whole bean can be used in the preparation of desserts (in China for example they are cooked with sugar, coconut milk and a little ginger), while the shoots can be used to fill Vietnamese spring rolls or as a side dish and are an ingredient in various dishes of Korea and northern China.
COMPOSITION AND BENEFITS
When germinating, the phytochemical compound content of seeds increases in several plants such as cereals, legumes etc. This has led to consumption of germinated seeds as a healthy food becoming increasingly popular in Western countries (3).
Germinated seeds are an important source of vitamins, minerals and antioxidant compounds such as phenolic acids and flavonoids. Mung bean plants contain higher amounts of phenolic compounds, flavonoids and have more ability to capture free radicals than the seeds of this species (2).
The mung bean is rich in proteins and iron (3). It has high nutritional value as it also contains dietary fiber, vitamins A, B1, B2, B6, C and E (particularly vitamin B1) and minerals such as potassium, phosphorus and magnesium.

DIRECTIONS:
To germinate: Soak the seeds for 6-8 hours. Rinse and place in a germinator. Germinate for 2-5 days, following the germinator instructions. The sprouting seeds can be consumed immediately or kept in the refrigerator. Wash before eating.
STORAGE INSTRUCTIONS:
Store in a cool dry place away from sunlight.
